{Sinfully delicious chili con queso}
2 tablespoons butter
1 small onion, chopped
2 cloves garlic, minced
1/2 cup fresh cilantro leaves and stems, chopped
jalapenos, chopped to taste
1 small can green chilies, diced
1 small tomato, coarsely chopped (or fresh salsa)
2 teaspoons cumin
1 cup milk (more may be necessary)
1 pound cheddar cheese, shredded
1 pound Velveeta cheese, cubed
2 cups sour cream
Saute onion, garlic, cilanto, jalapenos, chilies, tomato and cumin in butter. Set aside. Mix milk and cheeses in pan. Melt over low heat, stirring constantly. Add saute mixture. Stir in sour cream. If mixture is too thick, add in more milk. Keep on heat only long enough to bring back to serving temperature. Serve immediately with tortilla chips.
This is a large recipe. It is easily halved.
