{Cinnamon-ginger applesauce}
(Serves 8 – 10)
1 pound each – Granny Smith, Rome, and Gala (or McIntosh) apples

1 cup apple juice or cider (unsweetened)
1 Tablespoon lemon juice
2 strips lemon zest
3 Tablespoons “red hots” (cinnamon candies)
1 ¼ teaspoon ground ginger
- Peel, halve, and core apples. Cut into small chunks. Place in a large pot with apple cider, lemon juice, and lemon zest. Bring to a boil; reduce heat to low and simmer, partially covered for 25 minutes or until apples are tender. (soft)
- Stir in remaining ingredients. Continue to cook, stirring until the red hot candies dissolve. (3-4 minutes) Discard the zest, and crush apple mixture with a potato masher. Mash according to your taste – chunky or smooth.
This easy accompaniment to any holiday meal can be served hot or cold.
