{Chocolate Covered Cherry Cookies}
By Jennifer Ferrero
My Mom has been making these cookies for the holidays for many years. Everyone loves them, and we never seem to have enough! They go great with hot buttered rum, and are fun for a cookie exchange.
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. baking soda
1/2 cup butter, softened
1 cup sugar
1 egg
1 1/2 tsp. vanilla
1 10 oz. jar marachino cherries
1 6 oz pkg. semisweet chocolate pieces
1/2 cup sweetened condensed milk
Mix the first 5 ingredients in a large bowl. In a mixer beat together butter and sugar on low speed until fluffy. Add egg and vanilla, beat well. Add dry ingredients to creamed mixture, slowly. Beat all together. Shape into 1 inch balls and lay out on a greased cookie sheet (or use parchment paper). Press down the center of each with your thumb and add a 1/2 cherry to each one.
Meanwhile, mix together chocolate chips, sweetened condensed milk, until melted in a small saucepan. Stir in 4 tsp. of reserve cherry juice from cherry container. Spoon melted chocolate over each cookie.
Bake in preheated 350 degree oven for about 10 minutes. This recipe yields about 24 cookies. It's recommended that you double it, because these cookies are small and fly off holiday plates!
