{Huckleberry Cheesecake Bars}
This recipe is delicious and so pretty. It's an attractive addition to coffee or iced tea at a party.

You will need:
- 2 cups all-purpose flour
- 1 ½ cups quick or old-fashioned oats
- ¼ cup packed light brown sugar
- 1 cup (2 sticks) butter or margarine, softened
- 2 cups (12 oz package) white chocolate chips or Premier White Morsels
- 1 package (8 oz) cream cheese (softened) – Light variety works well
- 1 can (14 oz) sweetened condensed milk
- ¼ cup lemon juice
- 1 tsp. vanilla extract
- 1 jar (16 oz.) Huckleberry jam
- 2 TBSP. cornstarch
Mix together flour, oats, brown sugar in a large bowl. Add butter, mix until crumbly. Stir in full bag of morsels. Reserve 2 ½ cups mixture. Press remaining mixture in greased 9x13 pan. In a mixing bowl with a beater, add cream cheese, sweetened condensed milk, lemon juice and vanilla. Mix until creamy. Pour over crust. In another bowl mix together huckleberry jam and cornstarch and drop by spoonfuls over cream cheese mixture. Blend in berry mixture with a knife so that it covers cream cheese mixture. Add reserved topping and spread evenly. Bake at 350 degrees for 35-40 minutes, or until center is set. Cool and then cover and refrigerate for up to a day before serving. Cut into bars.
