Red Velvet Brownies
Pre-heat oven to 325 degrees. Butter/Oil an 8x8 inch pan and put a piece of parchment or foil on bottom of pan so that it sticks up the sides and makes it easy to pull the brownies out of pan.
Melt in stainless steel bowl over a pan of boiling water.
1 ounce unsweetened chocolate
½ cup butter
While chocolate is melting…Mix in separate container and set aside:
1 cup flour
½ tsp. baking powder
¼ tsp. salt
Add to chocolate mix after it is melted:
1 cup granulated sugar
3 eggs
1 tsp. pure vanilla extract
1 tbsp. red food dye
Stir flour mixture into chocolate mixture and mix just until incorporated. Pour into prepared pan and bake for 22-27 minutes until a toothpick inserted in middle will come out with just a few crumbs. Cool and frost with cream cheese frosting.
Cream Cheese Frosting:
8 oz cCream cheese, room temp
½ cup of unsalted butter, room temp
2 cups powdered sugar
1 tsp. pure vanilla extract
Mix cream cheese and butter together with the mixer with paddle attachment until it is smooth. Pull bowl off and scrape down the sides and mix again to ensure it is all mixed together and there won't be any lumps. Add vanilla. Add sugar ½ cup at a time until it is all incorporated and mix on high for about a minute to make frosting nice and fluffy.

Oh, these little snacks are addictive! Their delicate crunch makes them a perfect light snack; or throw a handful in your salad in place of croutons.
