{Pecan Tassies}

Jennifer Maltba, of Cedar House Soaps located in Priest River, Idaho, shares one of her favorites with us. She writes, "Here is a simple sweet treat that I like to make here at the Cedar House. The ingredients list is short, they are a snap to make, and with 3 guys in my house... they disappear quickly!"
Pecan Tassies
1 C. softened butter
8 oz. pkg. softened cream cheese
2 C. all purpose flour
1 egg, lightly beaten
3/4 C. packed brown sugar
1 tablespoon melted butter
1 tsp. vanilla
1/2 C. coarsely chopped pecans
Preheat your oven to 325º
For the Pastry: in mixing bowl beat together 1 C. butter and 8 oz. of cream cheese until combined and then stir in Flour. Press a rounded teaspoon of pastry dough evenly into the bottoms and sides of an ungreased 24 count mini-muffin pan.
For the Filling: in a small bowl combine 1 lightly beaten egg, 3/4 C. packed brown sugar, 1 tsp. vanilla, 1 tablespoon melted butter and then stir in 1/2 C. pecans. Spoon 1 heaping tsp. of filling into each pastry-lined mini-muffin cup.
Bake: in oven at 325º for 25-30 minutes or until pastry is golden brown. Remove from oven and let cool slightly in the pan. Remove from pan and let cool completely on wire rack.
