{Grilled Tilapia Packets}
4 8 oz. Tilapia fillets
paprika
salt
fresh ground pepper
ground cumin
4 teaspoon fresh cilantro, chopped
thyme, optional
2 small onions, thinly sliced
8 large black olives, thinly sliced
juice of 2 limes
8 tablespoons olive oil or butter
parchment paper
Gut 4 parchment paper hearts 12"x12" and brush generously with oil. Place fillets on oiled hearts. Season with salt, ground pepper, cumin and a liberal sprinkling of paprika. Sprinkle 1/2 teaspoon of cilantro on each fillet and top with red pepper, onion and olives. Drizzle lime juice evenly over each fillet, then 2 tablespoons of olive oil. Seal edges of hearts by folding up edges and pinching closed. It's helpful to start at the top of the heart shape and end at bottom, tucking the point of the paper underneath packet. Gill over hot coals for about 10 minutes. Cooking time will vary with thickness of fillets. Transfer packets to warm plates; open with sharp knife when ready to serve.
