Do you want your bananas and avocados to maintain their brilliant hues, your tomatoes and garlic their fabulous flavor? Keep them on the counter. Refrigerating turns bananas and avocados brown and diminishes the flavor of tomatoes and garlic. I keep a pretty little bowl on my counter just for avocados, garlic, and tomatoes. The bananas can go in the fruit bowl.

I prefer bananas at the bright yellow stage. As soon as I see brown I peel, break them into bite-sized pieces, and place them in a zippered bag in the freezer. They are now ready to add their smooth texture and potassium-packed punch to smoothies.

To ripen avocados simply place in a brown paper bag and leave it on the counter or your pantry shelf for a couple of days.
