{Spaghetti squash 101}
In your microwave: Cut spaghetti squash in half, and place it cut side down on a microwave-safe plate. Pierce it in several places with a sharp knife. Microwave for 10 to 12 minutes. Using a fork, scrape the spaghetti-like insides from the rind and top with your favorite pasta sauce and parmesan cheese.
On your stove top: Boil a large pot of water. When it is boiling, add the whole spaghetti squash, and leave for 12 minutes, or until a fork can easily be inserted. Remove from the water, pat dry, and slice in half. Extract the seeds, and pull a fork through the spaghetti- like insides to loosen them from the rind.
Health benefits of eating squash: Squash is packed with omega – 3 fatty acids, which increase the production of infection – fighting T Cells. Squash also contains manganese, a mineral that activates the body’s fat-burning enzymes.
