Spring Favorite: Chicken with Figs & LemonThis dish is exotic and unique with Moroccan flavors. The figs add a touch of sweetness and an interesting texture. The lemon makes it bright and fun for a lovely spring dish.
1 14½ ounce can chicken broth
2 1.7 ounce boxes chicken Dijon recipe mix, such as Knorr
1 teaspoon ground cinnamon
6 garlic cloves, minced
Grated zest and juice of 1 lemon
1 onion, quartered and thinly sliced
8 ounces dried Mission figs, halved
2 pound skinless, boneless chicken breasts and thighs
In a slow cooker, mix together chicken broth, recipe mix, cinnamon, garlic, and zest and juice of lemon. Stir in onion and figs. Push the chicken pieces down into the mixture. Cover and cook on LOW for about 4½ hours or until chicken is cooked through and tender but still moist. Serve with couscous.
