Light and Refreshing: Lemon-Grilled Shrimp
Try this delicious, healthy recipe tonight. With only 183 calories and 23g of protein per serving it is sure to be a hit! Serve with brown rice and a lovely salad. How about a nice glass of chilled white wine?
1/3 cup ketchup
3 tablespoons freshly squeezed lemon juice, divided
2 tablespoons chili sauce
1 tablespoon horseradish
1/4 teaspoon hot sauce
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon freshly grated lemon peel
1/8 teaspoon black pepper
10 medium-sized strawberries, sliced (optional)
2 pounds large fresh shrimp, peeled and deveined
Heat grill to medium-high heat. Combine ketchup, 1 tablespoon lemon juice, chili sauce, horseradish, and hot sauce in a small bowl; set aside. Combine olive oil, remaining 2 tablespoons lemon juice, garlic, lemon peel, and pepper in a small bowl. Poor mixture over shrimp. Grill shrimp in 2 batches on a grill rack over medium-high heat for 3 to 5 minutes. Toss shrimp with sliced strawberries (optional)
