Potluck Favorite: Corn Salsa
Gail Jantz, our dear friend and Mermaid enthusiast, says that this is an amazing summer potluck dish. It's a wonderful, colorful addition to any gathering. She says its cool and oh, so good!! Thanks, Gail!
Corn Salsa
2 cans shoepeg corn, drained
1 can blackeye peas, drained
4 oz pimiento, diced
1 green pepper, diced small
1 med. onion, diced small
2 avocados
Marinade:
1/2 cup sugar
1/2 c. vinegar
1/2 cup oil
2 Tbsp. Tiger Sauce (in grocery stores with other bottled sauces.
Mix all vegetables except the avocado. Pour marinade over and marinade overnight. Just before serving, drain and add diced avocado. Serve with chips.
